A combination of vegetables with blend of spices develop a unique taste in Vegetable Kolhapuri. Quick and simple recipe is great to serve in lunch with pori.This popular spicy mixed Vegetable Kolhapuri preparation has many variations. I have chosen this recipe which is a semi- dry vegetable closest to the traditional one and uses a mixture of desiccated coconut along with other spices as the base for the gravy.

Cauliflower 1 cup
Capsicum 2
Potatoes 2
French beans 1 cup
Carrots 2
Tomatoes 4 (blended)
Brown onion ½ cup
Red chilies whole 4
Orange color 1/4 tsp
Oil 1/4 cup
For Kola Pori Masala
Onion 1 medium
Garlic paste 1 tbsp
Coconut 1 tbsp
Coriander seeds 1 tbsp
Sesame seeds 1 tsp
Poppy seeds 1 tbsp
Cumin seeds 1 tbsp
Mustard seeds 1/4 tsp
Fenugreek seeds ¼ tsp
Cloves 4
Cinnamon 1
Cardamom 2
Dry red chilies 4
Coriander leaves 1 cup

1.Cut all the vegetables in big pieces.

2.Heat oil in a pan and fry all vegetables. Remove vegetables in a plate.

3.Grind all the ingredients under kola pori masala except coriander leaves.

4.In same oil, add the kola pori paste, tomato puree, and fry well, now add fried vegetables, and leave it on dam till tender.

5.Sprinkle coriander leaves and serve with pori.
