1.Virgin Mango Margarita

Ingredients:

2 20-ounce jars mango chunks, drained
Ice for blending
250ml lemon and lime soda
2 tablespoons of sugar

Method:

Blend those mango chunks to a creamy consistency.
Add ice and continue to blend once more.
Pour in enough soda and sugar to blend until smooth, adding ice if required.

2.Raspberry Daiquiri

Ingredients:

10 raspberries
1/2 ounce orange liqueur (optional)
1/2 teaspoon raw sugar
1 lime, juiced
Lime wedge and sugar for the rim

Method:

First prepare your martini glass by running a lime wedge around the rim.
Follow this by dipping the top rim of the glass into a plate of sugar.
Mix raspberries, lime juice and sugar together in a mixing glass.
Add copious amounts of ice and shake thoroughly.
Sieve the mixture into a martini glass, making sure no seeds get through.
Finally, garnish with a lime twist on the top and add a Raspberry!

3. Virgin Pina Colada

Ingredients:

7 oz pineapple juice
2 oz coconut cream
1 cup crushed ice

Method:

Mix pineapple juice, coconut cream and crushed ice in a blender.
Blend at high speed.
Pour into a collins glass.
For a sophisticated finish, garnish with a maraschino cherry.

4. Mock Champagne

Ingredients:

1/2 litre bottle of chilled ginger ale
1/2 can of frozen white grape juice concentrate, thawed
1 small basket of raspberries, rinsed and drained

Method:

1.Simply add all of the ingredients into a large pitcher.
2.Stir to combine.
3.Add raspberries and serve in a fancy glass.
